| Well its about noon and I am so wiped out. I have been up since about 5:45 which is the time I have to get up Mon-Thur to catch the shuttle that the school provides to take me to school. My first class Garde Manger roughly translated to Keeper of the Cold starts at 7 but it takes the shuttle 5 minutes to go from my apartment complex to one of the other school run apartment complexes after it picks me up. Then another 15 minutes to get to the school from there. Its so gay. If they would only let housing students buy parking passes and allow them to park on campus then I could get to sleep in about an extra 45 minutes. But Im almost done with the day so I cant really complain to much. Last quarter my first class started at 11 and I was done and home at around 630 which sucked major balls.
So back to Garde Manger. Like I said its roughly translated to keep of the cold and its my theory and lab class this quarter. We do a bunch of different things in that class. Right now we are working on Hors D'ouerves and Appetizers. But we also do Charcuterie and other butchering techniques. We do Ice Sculptures and Cold Courses and Salads and desserts and ice cream and Pates and Terrines and Sausages. The list goes on and on and on. Anything dealing with cold kitchen production of foods. The class is a lot of fun. My Chef for that class is Chef Hickey. He is a golden toque so its really cool to be taught by someone who is ranked as one of the best in the world. Today the whole class impressed him so much with our buffet that we set up of our foods. Oh yeah we make a buffet up everyday of all the stuff that we make in lab and we get to eat. So I get to eat a gourmet meal everyday. Its pretty bad ass. But anyway. Chef Hickey was so impressed with our buffet that he called down to the schools photographer and her come over and take pictures of everything so that it can be chronicled away in the Sullivan Herald. Which is a brochure printed every quarter to attract new would be chefs to come to our school.
Well I have rambled on quite a bit about that. Tonight Amber and I are probably going to go out and have a little date night. She hasnt been feeling very well lately and shes been working a lot the past couple of days so I told her that I would take her out tonight cause its her day off. I dont really know what we are going to do. Maybe hit up a movie or something. We will figure that out when we get home later. Well I am going to go on ahead and bounce for a while. | Sup all my ever so faithful viewers. Its been a hell of a long time
since I have been on this thing. My good friend Pdalicious has started
his up again so I figured why the fuck not. I am completely bored out
of my mind right now and I need something to keep from going completely
insane. I am living in Louisville now. Actually I have been for quite
some time now. About four months and some change. Its so freaking
awesome down here. I love it. I have met the most perfect girl for me
down here. Her name is Amber and she goes to School with me. Shes from
Tennessee and is absolutely amazing. You will here alot about her as
the updates roll in. I could never tire of telling you about how
marvelous and amazing and beautiful she is.
You are probably wondering what the hell I am doing in Kentucky.
Well my dear friends I am attending one the top Culinary Schools in the
Nation. Sullivan University. It is pretty cool. Only CIA ,that is the
Culinary Institute of America, and Johnson and Wales are better; and
they are barely better. I would actually go as far to say that I think
that we are the best considering that we have 3 Golden Toques teach
here. The Golden Toques are the top 100 chefs in the world. There are
only 10 in the U.S. and three of them teach here. I am also working at
Firehouse Grill part time for a little extra dinero. Its fun and really
easy. Well I am going to go on ahead and bounce for the night. I'll
probably be posting alot considering I have an hour break between my
A.C. Math Class and my Spanish Class. Later all.
